Vitamin C boosts non-heme iron absorption
Ascorbic acid reduces ferric (Fe³⁺) to ferrous (Fe²⁺) iron and forms a soluble chelate, increasing non-heme iron absorption in single-meal studies. However, a 2020 randomized trial in iron-deficiency anemia found no meaningful difference in hemoglobin recovery with added vitamin C.
